Looking for a last minute dessert for your Christmas menu? Then these vegan baked apples are ideal because you don't need a lot of ingredients and you don't have to spend hours in the kitchen preparing them.
The combination of soft apple, Christmas spices, granola and nuts smells wonderfully Christmassy as soon as it is prepared. The dessert is perfect with a scoop of vanilla ice cream. Bon appetit!
Ingredients for 4 baked apples
- 4 apples
- 100 g Crunchy Granola Original
- 40 g almond sticks
- 1.5 TL speculoos spice
- 2 tablespoons of coconut oil or vegan margarine
- 2 EL Almond Candy
- 40 g raw marzipan
- 4 scoops of vegan vanilla ice cream
- 4 vegan speculoos cookies
preparation
- Preheat the oven (180 C fan oven). Wash and dry apples and cut off a top from each. Remove the core with a ball cutter and carefully hollow out the apples. Make sure that there is an edge.
- For the filling, melt coconut oil in a small saucepan. Stir in Almond Candy and speculoos spice and mix with Crunchy Granola and almonds. Tear the marzipan into small pieces and fold it into the filling. Fill the apples with the mixture, place them on a baking tray lined with baking paper (if the apples do not stay upright: place them next to each other in a baking dish) and put the lid back on. Bake apples for about 25 minutes.
- Finely crumble the speculoos with your fingers. Serve warm baked apples with a scoop of vanilla ice cream and top with speculoos.
