    Baking vegan Christmas cookies is not as difficult or complicated as many people might think. You just have to know how to replace animal products and what to look out for. Expensive replacement products: none. Here are our tips for vegan Christmas baking.

    Mix butter, flour, and milk...

    • Regardless of whether it's rice, soy, oats, almonds or hazelnuts: When baking vegan, you can easily replace cow's milk with a plant-based drink.
    • You can easily swap butter 1:1 with plant-based margarine - for example in shortcrust pastry.
    • If you use coconut oil instead of butter: Only use about 2/3 of the specified amount of butter.
    • Nut butter is also the perfect alternative to butter for nutty cookie recipes. Before using, puree the puree finely and, if necessary, mix it with a little coconut oil.

    And then the egg comes... Watch out!

    Eggs have several functions when baking cookies: They serve as a binding agent for smooth dough, provide moisture and give the cookies flavor.

    You can replace eggs in cookie dough as follows:

    1. Ground flaxseed as an egg substitute: Mix one tablespoon of ground flaxseed with three tablespoons of water and let the mixture stand for 10 minutes until a gel forms. Your “vegan egg” is now ready. Also works great with ground chia seeds.
    2. Aquafaba for "egg whites": From now on you no longer have to pour away the water in the chickpea jars - you can easily use it to conjure up a vegan egg substitute. To do this, mix the draining water with 1/2 teaspoon of baking powder and 1/2 teaspoon of starch (e.g. locust bean gum). Then just beat all the ingredients with the hand mixer.

    Don't we need chocolate, honey, nuts and succade?

    We do not need. Instead of honey, you can use agave syrup or date syrup. Maple syrup brings a caramel flavor to your cookies.

    Instead of refined sugar, use coconut blossom sugar.

    Our version uses vegan ingredients and tastes even better than the original. The highlight is the ganache made from coconut and white chocolate.

    Vegan Butter Cookies - how is that done?

    You don't need butter at all to make wonderfully soft and delicious cookies that you can cut out. The cookies can also be made with vegan ingredients.

    Ingredients for vegan butter cookies, approx. 25 pieces

    • 200 g spelt flour
    • 1 pinch of salt
    • 75 g sugar
    • 125 g cold vegan margarine

      preparation

      1. Knead all the ingredients into a smooth dough, form a ball of dough and place it in an airtight container in the refrigerator for an hour.
      2. Preheat the oven (180 C top/bottom heat; 160 C fan oven). Line a baking tray with baking paper. Divide the dough into two pieces and roll out one part on a floured work surface to a thickness of approx. 0.5 cm. Use Christmas cookie cutters to cut cookies out of the dough and place them on the baking sheet.
      3. Bake the Christmas cookies on the middle rack for about 8 minutes until the edges turn slightly brown. Remove the cookies from the oven, let them cool and decorate as desired.

        Speaking of decorating: When it comes to toppings, you can let your imagination and creativity run wild! Icing made from powdered sugar and lemon juice is completely vegan, just like most colorful sugar sprinkles from the supermarket.

        When it comes to chocolate sprinkles, make sure they are made from dark chocolate and do not contain milk or butter fat. Grated coconut or chopped nuts are also suitable for decorating.
