Seasonal breakfast in August: top 3 recipes

Don't really know what to do with salads, cauliflower or fennel? Don't worry, we've created three exciting recipes that will give you that extra portion of fruit and vegetables for breakfast.

Refreshing green smoothie with lettuce, fennel and cucumber

Green vegetables contain a lot of fiber, which is important for your digestion. It also contains important vitamins and minerals. Together with the sweetness of fruit, your mixed breakfast is not only wonderfully refreshing, but also the perfect source of energy.

Ingredients for 1 serving

  • 2 handfuls of leaf salad
  • ½ Fennel
  • ½ cucumber
  • 1 handful of sweet grapes
  • 1 small apple
  • juice of half a lemon
  • 200 ml water

preparation

  1. Wash vegetables and fruit and, if necessary, peel, core and cut into pieces. Mix all ingredients in a blender or with a hand blender to create a creamy smoothie. Add more or less liquid depending on desired consistency.
  2. Pour into a glass and enjoy!

Yogurt Berry Bowl with Granola

Don't you feel like warm porridge in summer? This bowl is much more refreshing with cooling coconut yoghurt, sweet berries and crunchy granola.

Ingredients for 1 serving:

  • 150 g coconut yogurt
  • 1 TL agave syrup
  • 2 handfuls of fresh berries
  • 3 THE Crunchy Granola
  • 1 TL flaxseed

Preparation:

  1. Put the yogurt in a bowl and mix with the agave syrup.
  2. Refine and enjoy with berries, granola and linseed.

Chocolate smoothie bowl with cauliflower and cocoa

Cauliflower is a great alternative to banana to make the smoothie bowl wonderfully creamy. Together with cocoa, you not only get the heavenly chocolate pleasure for breakfast, but you also sneak vegetables into your first meal of the day. Cauliflower is also rich in folic acid, potassium and vitamin C and at the same time low in calories.

Ingredients for 1 serving:

  • 300 g cauliflower florets
  • 3 ice cubes
  • 150 ml plant drink
  • 3 tbsp sweetener, e.g. agave syrup
  • 1 tsp cinnamon
  • 3 tbsp cocoa powder

Toppings:

Preparation:

  1. Steam the cauliflower for a few minutes until it is nice and soft and then let it cool.
  2. Process all the ingredients for the smoothie bowl in the blender until creamy.
  3. Pour into a bowl, add toppings and enjoy!

For an extraordinary taste experience, the combination with radishes and strawberries is also suitable - not only in a smoothie, but also in your summer salad. You can also mix cauliflower with spinach or other green vegetables, while beetroot can be combined wonderfully with blueberries or blackberries.
