A few preparation tips in advance...
Before you get to the cooking pot, here are a few tips for you.
Which semolina is suitable?
Hard, soft, made from spelled, wheat or corn: there are countless types of semolina - but which one is best for the dessert? Clearly: soft semolina. This is very fine and makes the dessert wonderfully creamy and tender. Instead, hard semolina is better for making pasta and other pasta.
There is soft semolina not only made from wheat, but also from corn (polenta, you know!), rye or spelled.
Which vegan milk is the best?
That depends on which vegan drink is your favorite or which one you currently have at home. Rice, almond, oats or soy are ideal for semolina pudding. More flavorful variants such as hazelnut or soy vanilla are also ideal for giving the pudding that little something extra. Coconut milk brings a fruity, holiday touch.

But be careful: canned coconut milk is a little thicker than plant-based drink. You may therefore need a little more liquid when preparing it.
Extra tip for a creamy dreamy dessert happiness
For even more creaminess, replace half of the plant-based drink with vegan cream.
The simple basic recipe for vegan semolina pudding

Ingredients for one serving:

Preparation:
- Bring the milk and sweeteners to the boil in a saucepan. Let the semolina trickle in while stirring constantly. Remove the pot from the heat and continue stirring vigorously for a minute. Let it soak for five minutes.
- Rinse silicone pudding cups with water. Pour the semolina pudding into the molds and let it cool.
- Remove the pudding from the molds, top with ingredients of your choice and serve.
If you want to prepare the recipe for several people or portions, simply multiply the quantities accordingly.
What are the nutritional values for one serving?
Are you wondering how many calories a portion of vegan semolina pudding has? Good question. It all depends on which plant milk, how much sweetener and which topping you use. The recipe above with almond milk, coconut blossom sugar, a handful of fresh raspberries and a teaspoon of almond candy nut butter has around 330 calories.
Topping Game: Refine the vegan semolina porridge

Just like porridge, muesli or smoothie bowl, it only gets really good with the right topping. This also applies to semolina pudding. Top it to your heart's content or pimp up the dessert with spices and fruits:
- If you boil your semolina with coconut milk and cane sugar, 2 tablespoons of raspberries go perfectly with it. Luckily, the sweet berries are also available frozen. Simply stir in the frozen berries when the semolina comes to the boil.
- You and your guests will be on cloud nine if you sprinkle a tablespoon of briefly roasted coconut flakes on top.
- Drizzel like there is no tomorrow. Almond, cashew or hazelnut butter is not only an absolute eye-catcher on the dessert, but also a taste upgrade.
- Cinnamon and fresh mango also harmonize perfectly with the dish. Peel the mango and cut it into fine cubes and drape it around the dessert.
- Or a homemade sauce made from strawberries or other berries of your choice.
