Do you love the decadent spices of Pumpkin Spice Latte? Then you'll love this recipe: The bites made from pumpkin, dates, walnuts, almonds and warming spices combine the flavors of autumn in just one bite. Topped with a fresh coconut frosting, you are armed against cravings. Perfect for conscious snacking and as a snack on cold afternoons - especially good with a cup of chai latte or cocoa.
Ingredients for the bites, about 12 pieces
- 200 g pitted Medjool dates
- 100 g pumpkin puree
- 150 g walnuts
- 120 g almond flour
- 2 TL cinnamon
- 1/2 tsp nutmeg, ground
- 1/2 tsp ginger powder
- 1/4 tsp sea salt
- 1.5 TL ground vanilla
For the coating
- 2 tablespoons of coconut cream
- 1 THE Coconut Crush
- ½ tsp lemon zest
- coconut flakes
preparation
- Process Medjool dates and pumpkin puree into a paste in a food processor.
- Add the walnuts, almond flour, cinnamon, nutmeg, ginger powder, salt and vanilla and process everything into a uniform mixture. No food processor on hand? Simply chop the walnuts in a blender, mix with the remaining dry ingredients and then knead with the date mixture. You like it spicy? Add more ginger to the dough.
- Form 1-2 tablespoons of dough into a ball and place on a plate lined with baking paper until all the dough is used. Place bites in the refrigerator for 30 minutes.
- For the coating, melt the coconut while stirring in a water bath and stir in the Coconut Crush. Using a teaspoon, place a dollop of coconut butter on each bite and let the glaze run down the sides. You can also completely dip the bites into the glaze if you want. Then place the bites back on the plate with baking paper and sprinkle with the lemon zest. Store in the refrigerator. If you want to eat the bites without frosting, you can simply roll them in coconut flakes.
