Want a healthy Christmas treat? Then the chocolatey angel eye cookies with oat flakes and lots of hazelnuts are ideal for you: naturally sweet, high in fiber and absolutely delicious. The flourless cookies are made with just eight ingredients and are ready in under 30 minutes.
You can use any nut butter of your choice for the filling. Not a fan of nut butter? With chia jam the cookies taste wonderfully fruity. Have fun baking them!
Ingredients for about 20 pieces
- 120 g oats
- 80 g ground hazelnuts
- 3 tablespoons of cocoa powder
- 1 pinch of salt
- ½ tsp baking powder
- 40 ml coconut oil
- 60 ml maple syrup
- 100 g Wholey Sh*t (Plan B: Coconut Crush)
preparation
- Preheat the oven (180 °C top and bottom heat, 160 °C fan oven).
- Finely grind the oat flakes in a blender and mix with hazelnuts, cocoa, salt and baking powder. Melt coconut oil in a small saucepan, mix with maple syrup and add the mixture to the dry ingredients. Knead everything into a dough.
- Form about 20 balls out of the dough and place them on a baking tray lined with baking paper, leaving some space between them. Use the end of a wooden spoon to make a well in the dough and fill it with nut butter. Then bake the cookies for about 12-15 minutes.
